I’m curious whether there is some software & hardware, which could be used to operate a complex extruder from another place via internet. where all the controllers are displayed on monitor and can be changed in real time.

perhaps.but that would be very complex plus why would one not give local operating controls to a machine where any thing could go wrong.
Full remote operation is now possible, using via Modbus - TCP, over port forwarding
- utilizes Omron MX2, via Modbus - RS485
- utilizes Omron E5 temperature controllers, via Modbus - RS485
- uses a Controllino - Mega for the I/O handling and routing
